How many days/ways can I eat this?
These are an asian cabbage with a mustard green like bitterness. Sauteed garlic and onion, plus roasted vegetable sauce.

Vegan Walnut Chocolate Chunk Cookies
All amounts are best guesses, I didn't measure a thing. This was a small batch, since one of the silpats is dirty from roasting potatoes for dinner. These cookies are crisp and crumbly.
Pre-heat over to 350.
1/2 cup margarine
1/4 cup sugar
2 tbsp maple syrup (grade b)
1 cup whole wheat flour
1 tbsp vanilla extract
1/4 cup Scharfenberger 60% chocolate, cut into chunks
1/3 cup walnuts (don't bother chopping)
In kitchenaid, blend butter, sugar, and vanilla extract. Should look like the beginning of cake frosting. Add walnuts, add flour a bit (1/4 cup or so) at a time. Try to minimize the mixing once the flour is added. Occasionally stop blender and use wood spoon to pick up the bits of flour at the bottom. Texture should be a bit crumbly. Add maple syrup until the crumbly mixture becomes moist, and pulls away from the sides of the bowl.
Mix in chopped chocolate. Spoon 1-2 tbsp cookies onto silpat, bake in 350 oven for 12-15 minutes.

Vegan Cardamom Shortbread
Adapted from Lord Krishna's Cuisine recipe.
== Pre Heat ==
Oven to 250 F.
== Ingredients ==
1/2 cup coconut oil
1/2 cup earth balance margarine
1/2 cup sugar
2 1/2 cup whole wheat flour
1 tbsp freshly ground cardamom (plus a few extra grinds)
1/4 tsp salt
1/4 tsp baking powder

Drop 1 tbsp of batter in a high walled bowl, spin a few times, transfer to silpat. (When I do this with other cookies, I put a bit of cinnamon sugar in the bowl, to get a thin crust of sugar on the top. This batter was so sweet, it didn't need it. But cardamom sugar would be a nice way to make this cookie even sweeter. )
